ANOTHER ESSENTIAL SKILL BUILDING SESSION : PORK BUTCHERY

SUNDAY MARCH 19TH AT LEGENDARY MEATS 10AM – 4PM

This 6 hour workshop will include hands on instruction on how to break down a pig. Participants will learn sausage making and the basics of brining and curing, along with some how-to on traditional preservation techniques. At the end of the day you will have the confidence to butcher your own hot- not to mention you’ll gain a new appreciation for the art of butchery.

All participants will head home with approximately 8 to 10 lbs of meat from the days breakdown. The portk iis Fraser Valley raised Yorkshire cross. Raised and processed with animal care and husbandry as a focus, in an environmet with lots of room to root & run. Antibiotic-free pork, raised without any growth hormonese.

Your Instructor: Ben Carson of legendary Meats has spent the past 14 years in the meat industry, working in all aspects of butcher and management. His real passion lies in whole beast butchery, trying to minimize waste in a very commercially wasteful industry. Plus he is insanely entertaining and knowledgeable.
